MY STORY...

Chef Karol

About Me
& Umami

I was born and raised in Europe, the youngest of 7 siblings.  We had quite a large family, and shared a humble sized space.  The house was chaotic at times with  my parents raising 7 children.

My most best memory was always around the table.  Dinner time was when the family connected with how their day was going, and what the latest news was.  My mom would prepare the most delicious meals, and she would always invite the neighborhood kids over.

That is when my fascination for food grew.  We had a lot of different guests over the years, and it seemed the table was a refuge and joyous place for many.  The kitchen and table was the heart of the family in our home.

Flashback some years, and I have found myself traveling around Europe, trying different foods and growing my passion more and more.  I traveled through Thailand for a half year, and ended up moving to the Florida Keys.  I became familiar with different tastes that I didn't know before.  It is also there, that I started my humble beginnings, first as a dishwasher, then as a co-partner of a restaurant.  I have lived in the Keys for 7 years.

It was in Florida that I learned of my mom's passing. I remember playfully telling my mom as a child that I was going to move to Honolulu one day.  I pondered the thought, and decided there was a reason why I told my mom that.  A week later I find myself moving to Honolulu and fulfilling what I told my mom I would do.

When I arrived in Honolulu, I was intrigued by the different customs and cultures I was not yet familiar with.  I tried different poke I haven't had before, went to my very first luau to try Hawaiian food.  I loved that there were so many different cultures, foods, customs, but most importantly I found what I was looking for.  The people in this place I now call home have something that I didn't find elsewhere, except in my mother's home.  That thing, is the Aloha Spirit.   I decided that I want to dedicate my life to serving food with Aloha, just like my mother did in our home growing up.  I hope you allow me to share my experience and passion with you through cooking.
